RPCS3 is running fairly well in my experience. It can be a bit hit or miss on what games work, but a lot of the most popular games run fine. There’s even upscaling to 4K and getting games to run a 60 FPS that originally only did 30.
Poke around on here and see if what you’re looking for is playable. You’ll even find workarounds and optimizations for specific games (MGS4 is a big one for this)

I’m running a couple dozen docker containers on unraid and I only have one NVME cache disk, it’s 256 GB. I have only have 76 GB filled on my cache disk, the majority being attributed to Plex with things like movie trailers, temporary storage for torrenting, etc.
Just wanted to give you a heads up that 1 TB and a 2 TB NVME drives may be a bit overkill unlesa you’re trying to host a lot of VM’s

I got some massive 48U rack off Craigslist for like $50 and then cut it in half with an angle grinder, got some steel and screwed it all together to keep it stable. It ain’t pretty but the Frankenstein monster vibe adds to its character.
And I’m using the other half for audio equipment down the line so it all worked out
