Only way for them to get that data is by you downloading their proprietary app. When it comes to the content you post here its all public and you can’t prevent them from seeing it.
So can Facebook harvest our data even though we aren’t on their instance?
Everyone can “harvest” public data. Defederation doesn’t do anything about that.
Facebook can harvest all the data in all the instances while being defederated.

They couldn’t get any of that information through a federated instance. If they federated, you wouldn’t interact with them, your instance would.
