I just made my first sahti, with baker’s yeast and eastern red cedar branches. It was weird and wonderful, it tasted like cedar smells. Lots of wild yeast from the cedar didn’t do it any harm.
Just finished picking apples, so I can dehydrate them in slices to use later for brewing. I’m obsessed with apple lambic RN, but don’t have to time to brew a batch. A few of the apples were suitable for storing whole. Maybe later, I can reactivate/rehydrate the lovely yeasts on the apple peels and finally get a lambic.

Hot diggity dog. You’ve living the dream. I can’t get the closest brewery to answer my inquiry about buying fresh yeast, old hops, etc. they’re friendly, but not that helpful. A yes or a no would be sufficient.

There are thousands of types of mold besides the ones you mentioned and most are not harmful to humans. But there are many that can be very, very harmful under the right conditions, like some types of black mold people find in their basements. Source: real life experience, this week, trying to convince a non profit to move out of a free basement rental location before the mold related lawsuits start :) Unless you can precisely identify the mold, it’s best to assume the worst. You took one for the team. Keep us updated! I had a gallon of fresh raw apple juice that I’m using to make a half ass lambic. It’s slowly settling. Did you use anything to fine it before racking? Is that the right term? Using gelatin or isinglass, etc.
